 He is the father of champagne, don Perignon. He spent most of his life thinking about how to control the “willfulness” of wine – the residual sugar makes the wine bubble. But bubble, like a naughty child, completely ignored the ascetic monk’s mind. In all desperation, he had to “make a plan”, add more sugar, and simply let the wine bubble enough.
